We are really excited here at Bribe as we have just launched a new whiz bang Bribe website which is full of all the bells and whistles, lots of titbits, pic’s and products.
It also includes a ‘Scoop’ section .. where I will share, on a regular basis, great places, recipes and generally ... (hopefully) things of interest.

For all our International followers … this Scoop is about some of my favourite haunts in Aus.
As a devotee of fine food, fine wine and eclectic spaces I find myself forever in search of the different and interesting.
Through my travels I have found what I believe to be the most unique in our sun burnt country… here are a few:

Rae’s at Wategos – Byron Bay, Northern New South Wales
A wash of soft powdery pink in a mad Morrocan style, Rae’s sits out on a small headland with uninterrupted views of the Pacific ocean. The outdoor restaurant is sophisticated, layered in shades of white. Braziers burn while the night sky is lit with the constant sweeping of the lighthouse strobe, sitting at the most easterly point in Australia. This unique space is permeated with the sweet scent of frangipani and the roar of the ever popular Wategos surf beach as you dine under the stars.
Rae’s is one of my favourite boutique hotels in the world. It has soul and character ... which is very hard to find.

Star of Greece – Port Willunga, St Vincent’s Gulf,
South Australia
A kooky restaurant, formally an old toilet block, is propped atop of the sweeping cliffs of Port Willunga … the views are sensational.
With eclectic mismatched crockery and brightly painted foldaway chairs the restaurant space is relaxed, cheeky and playful; underpinned with the confidence of superb seafood, an interesting menu and an excellent wine list. Star of Greece nestles amongst the vineyards of the world reknown wine region of McLaren Vale.
The large expanse of ocean often entertains with the pods of dolphins at play. Star of Greece is fantastic all year round, the grey rain swept days of winter make a great showcase for nature’s theatre and the sunny blue skies of summer are a given.

T’Gallant – Red Hill, Victoria
An hour from Melbourne on coastal Mornington Peninsula, a real foodies’ retreat … a popular spot for gastronomes and wine lovers or those simply day tripping from Melbourne looking for food, wine and song.
Set amongst vine–striped hills and rustic vege’ gardens, T’Gallant is outdoor dining at its best with the shared tables of Spuntino Bar nestled beneath the shady boughs of old fig trees. Live music fills the air, coupled with the laughter of kids at play and constant banter of those enjoying wood fired pizzas. The indoor restaurant, La Baracca Trattoria is superb and wonderfully casual. I had a fabulous evening with my family some time ago .. it was a warm summer’s night… we ate rustic Italian cuisine, listened to live Italian opera and danced into the night.
The woodfired mushroom and gorgonzola pizza is to die for. Here is the recipe for anyone wanting to turn their hand to it at home but there is nothing like the original and the best at T’Gallant.
T’Gallant Woodfired Mushroom and Gorgonzola pizza.
Ingredients
For the dough (makes enough for three pizza bases)
500gm strong plain flour
11/2 tsp of instant yeast
2 tablespoons of extra virgin olive oil
270ml to 300ml of warm water
For the topping
1 cup of grated mozzarella
1 cup of gorgonzola bottazolla (or good quality gorg)
2 cups of sliced small button mushrooms
¼ cup of chopped Italian parsley
2 cloves of chopped garlic
Method
Make the dough and then let rest for 30mins.
Once proved roll out into a thin base.
Combine the mushroom, garlic and salt. Allow to marinate.
Top the base with the grated mozzarella and then apply the marinated mushrooms liberally.
Finish by topping with globs of gorgonzola.
Cook until base is crispy preferably in a wood fired oven or alternatively in a very hot (250 degrees plus) home oven.

Bribe gets the royal touch
It was very amusing when I received an email from a well know Royal household and deleted it as spam. Receiving another enquiry we started swapping emails.
It’s all very hush hush and we’re not allowed to tell .. but … guess which royal household (here’s a clue .. in the middle east) now uses our Bribe Luci hi ball glasses in the palace?
We can’t tell but have fun guessing!
